You don't have to restart the game, just select the Very Hard difficulty and the level you want to play (in this case the Tower) and it will unlock the trophy.

To get the Very Hard completion trophy, just do the same, but select the first level and run through all of them with you upgraded chars…

I got my platinum yesterday :D

For the “What’s next?” trophy, it’s enough to finish each level on ‘very hard’ from the choose level menu, it doesn’t even have to be in order. I completed the Tower of Sarek first, to get the “Better than Developers” trophy, and later got “What’s next?” on the Iron Forge level. Oh, and the Platinum
